Bone Broth Christmas Ham Glaze

  • 500ml Byron Bay Organic Chicken Bone Broth
  • 4 Tbs Cumquat Marmalade (or any good quality/homemade marmalade)
  • 2 Tbs Organic Raw Honey
  • 50ml Apple Cider Vinegar
  • 1/2 a bunch of fresh thyme (picked)
  • 1 tsp Celtic Sea Salt

  • Add your Organic chicken broth to a small saucepan and place on the stove top on a medium heat and let it simmer until it has reduced by half
  • Add all your other ingredients except the thyme and continue to simmer on a medium heat until reduced down to half the volume again or until thick and sticky this will take roughly half an hour.
  • Remove from the heat and stir through your picked thyme. Leave to cool on the bench until you are ready to glaze your ham or store in the fridge or freezer for a later date.
